Healing Ginger Garlic Broth with Rice Noodles

This comforting broth combines the warm flavors of ginger and garlic with rice noodles, making it both nourishing and delicious.

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 6 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 200g rice noodles
  • 1 cup mushrooms, sliced
  • 1 cup spinach
  • Chopped scallions for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
  3. Pour in the vegetable broth and soy sauce. Bring to a simmer.
  4. Add sliced mushrooms and cook for 5 minutes.
  5. Add rice noodles and cook until tender according to package instructions.
  6. Stir in spinach just before serving and allow it to wilt.
  7. Drizzle with sesame oil and garnish with chopped scallions. Serve warm.
