Healthy Chicken Breast with Zucchini and Squash

  • 2 tablespoons olive oil
  • 10 oz zucchini, sliced
  • 10 oz yellow squash, sliced
  • 1 teaspoon garlic powder
  • 3 teaspoons Italian seasoning
  • Juice and zest of 1 lemon
  • Salt and black pepper, to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. Season the chicken: Place diced chicken breast in a bowl. Add salt, pepper, garlic powder, and half of the Italian seasoning. Toss well to coat evenly.
  2. Heat the skillet: Warm olive oil in a large skillet over medium-high heat. Let it heat for about 1–2 minutes.
  3. Cook the chicken: Add chicken to the hot skillet. Cook for 5–6 minutes on one side until golden brown. Flip and cook another 4–5 minutes, until fully cooked and no longer pink.
  4. Add the vegetables: Add zucchini and yellow squash slices to the skillet. Season with the remaining Italian seasoning, garlic powder, salt, and pepper. Gently stir to combine.
  5. Cook until tender: Continue cooking for 3–4 minutes, just until the vegetables are tender but still slightly crisp.
  6. Finish with lemon: Stir in lemon juice and zest for a fresh, bright flavor. Garnish with parsley if desired. Serve hot.

Cut chicken and vegetables uniformly for consistent cooking. Use a meat thermometer to ensure chicken reaches 165°F (75°C).
