Healthy Chicken & Sweet Potato Rice Bowl

A nutritious and delicious chicken and sweet potato rice bowl packed with protein and vitamins, perfect for lunch or dinner.

  • 1 lb chicken breast
  • 2 medium sweet potatoes, diced
  • 1 cup cooked rice (white or brown)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, pepper, and paprika. Mix until well coated. Spread on a baking sheet and roast for 25-30 minutes.
  3. While the sweet potatoes roast, season the chicken breasts with salt, pepper, and garlic powder. Heat the remaining tablespoon of olive oil in a skillet over medium heat and cook the chicken for 6-7 minutes on each side until fully cooked.
  4. Let the chicken rest for a few minutes, then slice it into strips.
  5. In serving bowls, layer the cooked rice, roasted sweet potatoes, and sliced chicken. Garnish with parsley if desired.
