Healthy High Protein White Chicken Chili

A delicious and nutritious chili packed with lean protein from chicken and rich flavor from beans and spices. Perfect for a family meal or hearty lunch.

  • 2 cups cooked, shredded chicken
  • 1 can (15 oz) great northern beans, drained and rinsed
  • 1 can (10 oz) green chili enchilada sauce
  • 1 can (14.5 oz) low-sodium chicken broth
  • 1 cup corn (frozen or canned)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1/2 cup plain Greek yogurt or sour cream (for creaminess)
  • Fresh cilantro (for garnish)

Instructions

  1. Sauté the onion and garlic in a large pot or Instant Pot until softened.
  2. Add the cooked chicken, beans, enchilada sauce, chicken broth, corn, cumin, chili powder, salt, and pepper.
  3. Stir well and bring to a boil.
  4. Reduce heat and simmer for about 20-30 minutes (or cook in the Instant Pot on high pressure for 10 minutes).
  5. Stir in Greek yogurt or sour cream just before serving for added creaminess.
  6. Garnish with fresh cilantro and enjoy!

Notes

Store in an airtight container. Can be kept in the fridge for 3-4 days or frozen for up to 3 months.
