  • 4 cups of juice – Choose 100% juice with no added sugar. Grape, apple, or cherry are my kids’ favorites!
  • 2 tablespoons unflavored beef gelatin – I recommend brands like Vital Proteins or Great Lakes. Do not substitute collagen or protein powder.
  • 2 tablespoons honey, agave, or cane sugar (optional) – Sweeten to taste. If your juice is already sweet, you might not need any extra sweetener.

Instructions

  1. Bloom the gelatin
    • Pour 1/2 cup of your juice into a liquid measuring cup or small bowl.
    • Sprinkle the gelatin evenly over the juice and stir to combine.
    • Let it sit for about 5 minutes. The mixture will thicken significantly and should look very grainy.
  2. Heat the remaining juice
    • While the gelatin blooms, add the remaining 3 1/2 cups of juice to a medium saucepan.
    • Heat over medium-high heat until steaming. It doesn’t need to boil.
  3. Melt the bloomed gelatin
    • Add the sweetener (if using) and the bloomed gelatin to the hot juice.
    • Stir constantly until the gelatin is fully dissolved. This step is key for a smooth texture.
  4. Set the gelatin
    • Pour the mixture into a 2-quart ceramic pan or heat-proof containers.
    • Cover with plastic wrap and chill in the refrigerator for at least 3-4 hours or until completely set.
  5. Serve & enjoy
    • Once set, cut into cubes or scoop into bowls.
    • Store any leftovers in the refrigerator.
