Herb and Garlic Mashed Potatoes

A delightful twist on classic mashed potatoes with creamy texture and herby flavors, perfect as a side dish.

Ingredients

  • 1 head garlic, small
  • 6 medium potatoes
  • Salt to taste
  • 50ml/1/4 cup hot whole milk
  • 100g/1/2 cup unsalted butter
  • 12 tbsp parsley
  • 12 tbsp dill

Instructions

  1. Preheat the oven to 200C (400F).
  2. Cut the top off the head of garlic and wrap it in aluminum foil.
  3. Place the wrapped garlic in the oven and bake for 45-50 minutes.
  4. Once baked, cool the garlic for ease in squeezing out the cloves.
  5. Peel and quarter the potatoes, boil in salted water until very tender (15-20 minutes).
  6. Squeeze the roasted garlic into a bowl and mash until smooth.
  7. Drain the cooked potatoes and let them steam dry for a minute or two.
  8. Return potatoes to the pot, add hot milk, and mash until smooth.
  9. Add unsalted butter, mashing until creamy.
  10. Stir in half of the mashed roasted garlic, adjusting to taste.
  11. Season with salt as desired.
  12. Add chopped parsley and dill, folding in gently.
  13. Serve hot, topped with extra butter if desired.

Notes

These mashed potatoes can be stored in an airtight container in the fridge for up to three days or frozen for up to three months. Add a splash of milk when reheating.
