    • 1 ounce hibiscus syrup
    • 6 ounces sparkling water (or club soda)
    • Ice cubes
    • Fresh lime wedges, for garnish
    • Optional: Fresh mint leaves for garnish

Instructions

  1. Make the Hibiscus Syrup: In a small saucepan, combine sugar, water, and hibiscus flowers. Heat over medium, stirring until sugar dissolves and mixture steams (no need to boil). Remove from heat, let steep 10 minutes, then strain. Cool and refrigerate for up to 2 weeks.
  2. Assemble the Mocktail: Fill a tall glass with ice. Add 1 ounce hibiscus syrup, top with sparkling water, and stir gently. Squeeze a lime wedge over the top and garnish with mint if desired.

Notes

Swap sugar for honey or agave if preferred. To keep the mocktail fizzy, mix syrup and sparkling water just before serving. Add muddled mint, berry juice, or lemonade for flavor variations. Store hibiscus syrup in an airtight container in the fridge for up to two weeks.
