Hibiscus Strawberry Collins Mocktail

Hibiscus Strawberry Collins Mocktail

This Hibiscus Strawberry Collins Mocktail is a bright, floral, and fizz-filled twist on the classic Collins. Tart lemon, juicy strawberries, and homemade hibiscus syrup meet chilled white grape juice and club soda in this stunning zero-proof sipper. With its jewel-toned color and layered botanical flavor, it’s perfect for brunch, baby showers, or any time you want a grown-up mocktail that stuns in the glass and sparkles on the tongue.

Ingredients

Scale
  • 0.75 oz hibiscus-strawberry syrup
  • 0.5 oz fresh lemon juice
  • 2 oz chilled white grape juice
  • 34 oz club soda
  • Ice, as needed
  • Garnish:
  • Strawberry slice
  • Lemon wheel

Instructions

  1. Fill a tall Collins or highball glass with ice.
  2. Pour in the white grape juice, hibiscus-strawberry syrup, and fresh lemon juice.
  3. Top with club soda (3–4 oz), pouring gently to preserve the bubbles.
  4. Stir gently with a bar spoon to swirl the colors without losing fizz.
  5. Garnish with a strawberry slice and a lemon wheel. Serve immediately.

Notes

For extra floral flair, add a few torn mint or basil leaves. Swap club soda with sparkling lemonade for more zing, or replace white grape juice with alcohol-free rosé for extra depth. Homemade syrup keeps in the fridge for up to a week. Freeze leftovers into ice cubes for an easy mocktail base later.
