  • 2 (15-ounce) cans white beans (cannellini or navy beans), drained and rinsed
  • 1 1/2 cups frozen corn
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro (for serving)
  • 1/4 cup crushed tortilla chips (for serving)
  • 1/4 cup shredded Monterey Jack cheese (for serving)
  • 1 avocado, sliced (optional, for serving)
  • Lime wedges (for garnish)

Instructions

  1. Heat oil in a large pot over medium heat. Add chopped onion and jalapeño, cooking until softened (about 8 minutes).
  2. Stir in minced garlic, oregano, and cumin, cooking for 1 more minute until fragrant.
  3. Add chicken, broth, green chiles, salt, and pepper. Bring to a boil, then reduce heat and simmer, uncovered, for 10–12 minutes until chicken is fully cooked.
  4. Remove chicken from the pot and let it rest for a few minutes before shredding with two forks.
  5. Stir in white beans and bring the chili to a simmer. Use the back of a spoon to mash about 1/4 of the beans to thicken the chili.
  6. Add shredded chicken and frozen corn, stirring until heated through (about 1 minute).
  7. Turn off the heat and stir in sour cream for creaminess.
