Holiday Surprise Basket Cookies

Fun cookie cups that you can fill with treats such as candy, nuts, or jam. These cookie baskets are easy to make and great for parties or gifts.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 1/2 cup unsalted butter, room temperature
  • 1 cup candy, nuts, or dried fruit (or more if desired)
  • 1/3 cup cocoa powder (optional)
  • Sprinkles and icing tubes

Instructions

  1. In a large bowl, cream together the butter and sugars on medium speed until combined.
  2. Blend in the eggs and vanilla, scraping down the sides of the bowl as needed.
  3. Add flour, baking soda, and baking powder on low speed until combined. The dough will become thick.
  4. Optionally, refrigerate the dough for at least an hour or up to overnight.
  5. Preheat your oven to 350°F (175°C).
  6. Divide dough into 3 equal pieces and combine 2 of them.
  7. Prepare a muffin pan with cooking spray and press the larger piece of dough into the cups.
  8. Bake for 13-16 minutes until golden, and cool in the tin for 5 minutes.
  9. Fill cooled cookie cups with your choice of candies, nuts, or jam.
  10. Roll out the remaining dough and cut out circles to place atop the filled cups.
  11. Bake these top cookies for 8-10 minutes, allow to cool, and decorate.
  12. Serve and enjoy!

Notes

These cookies can be made ahead of time and filled just before serving. Store unfixed shells at room temperature for up to 3 days.
