Homemade Kefir

A creamy and tangy probiotic-rich drink that’s simple to make at home.

Ingredients

  • 4 cups whole dairy milk
  • 1 to 2 tsp activated milk kefir grains

Instructions

  1. Prepare the jar: Start with a clean dry quart-size glass jar.
  2. Add the kefir grains: Add the activated milk kefir grains to the jar.
  3. Pour in the milk: Pour in 4 cups of whole dairy milk.
  4. Stir gently: With a clean spoon, gently stir the mixture to combine the kefir grains with the milk.
  5. Cover the jar: Cover the jar opening with a cloth, coffee filter, or paper towel and secure with a rubber band or lid ring.
  6. Let it ferment: Place the jar at room temperature for 12 to 48 hours.
  7. Check the consistency: Once it has thickened slightly and has a sour smell, it’s ready.
  8. Strain the grains: Use a non-metal strainer to strain out the kefir grains.
  9. Store and enjoy: Pour the finished kefir into a clean bottle and store in the fridge.

Notes

Store homemade kefir in the refrigerator for up to 1 to 2 weeks. Freeze it in ice cube trays for longer storage.
