Honey-Lavender Lemon Pops

A sophisticated, naturally sweetened frozen treat blending zingy lemon, calming lavender, and raw honey. Perfect for both kids and adults during hot summer days.

  • 1¾ cups fresh lemon juice (about 810 large lemons)
  • 2 cups filtered water
  • ½ cup raw honey
  • 1½ teaspoons dried culinary lavender buds

Instructions

  1. In a small saucepan, combine 1 cup water, honey, and lavender buds. Heat over medium, stirring until honey dissolves. Once it simmers, remove from heat.
  2. Let steep for 10 minutes, then strain through a fine mesh sieve. Press lavender buds to extract remaining liquid. Cool to room temperature.
  3. In a large bowl or measuring cup, mix cooled lavender-honey liquid with remaining 1 cup water and lemon juice. Stir well and taste for balance.
  4. Pour mixture into popsicle molds, leaving ¼ inch at top. Insert sticks and freeze at least 6 hours or overnight.
  5. To serve, run warm water over molds for 10-15 seconds and gently release pops. Store extras in freezer bags up to 2 weeks.

Notes

Use only culinary-grade lavender. Taste mixture before freezing, as sweetness dulls when frozen. Don’t skip straining for a smooth texture.
