Honey Lavender Sugar Cookies

Delightful cookies that blend the sweet taste of honey with fragrant lavender, creating a soft and chewy treat.

  • ⅓ cup clover honey
  • 1 tablespoon + 2 teaspoons dried lavender, divided
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1¾ cup all-purpose flour, sifted
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup sugar (for purple sugar)
  • 1 drop purple or violet food coloring

Instructions

  1. In a small saucepan, heat ¼ cup honey and 1 tablespoon of dried lavender over medium heat. Stir and bring to a gentle boil. Boil for 3-5 minutes, then let cool to room temperature.
  2. Combine purple food coloring with ½ cup granulated sugar and set aside.
  3. Cream the softened butter using an electric mixer for 2-3 minutes. Add the cooled lavender honey and granulated sugar, mixing well.
  4. Add the egg and vanilla extract, beating for another 1-2 minutes.
  5. Sift together the flour, cream of tartar, baking powder, baking soda, and salt in a separate bowl. Gradually add this mixture to the creamed butter mixture in three parts, mixing fully each time.
  6. Fold in the final 2 teaspoons of dried lavender.
  7. Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  8. Scoop tablespoon-sized balls of dough onto the cookie sheet, sprinkle with purple sugar, and press into discs.
  9. Bake for 8 minutes, rotating the cookie sheet halfway through. Let cool on the pan for 2-3 minutes before transferring to a wire rack.

Notes

These cookies are best enjoyed fresh out of the oven. Store in an airtight container for up to a week or freeze for up to three months.
