  • 1/4 cup honey
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil for cooking
  • 1 cup white or brown rice, cooked
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon fresh lime juice (for rice)
  • 1/2 teaspoon lime zest (optional)
  • Salt to taste (for rice)
  • 2 ripe avocados, sliced
  • 1 tablespoon fresh lime juice (for avocado)
  • Salt and pepper to taste (for avocado)
  • 1 small jalapeño, seeded and finely diced (optional)
  • Extra cilantro leaves for garnish
  • Lime wedges for garnish
  • Red pepper flakes (optional, for garnish)

Instructions

  1. In a bowl, whisk together honey, lime juice, lime zest, garlic, salt, and pepper. Pour over chicken breasts and marinate 15-120 minutes.
  2. While chicken marinates, prepare rice and avocado layers.
  3. Remove chicken from marinade and pat dry. Reserve marinade.
  4. Heat olive oil in skillet over medium-high heat. Cook chicken 6–7 minutes per side until internal temp reaches 165°F (74°C).
  5. During final minute of cooking, add reserved marinade to skillet and boil to reduce into a glaze.
  6. Remove chicken, let rest 5 minutes, then slice thinly against the grain.
  7. Fluff cooked rice in a bowl. Stir in cilantro, lime juice, lime zest (if using), and salt.
  8. Slice avocados, toss gently with lime juice, salt, pepper, and diced jalapeño (if using).
  9. On each plate, stack layers using a ring mold: cilantro lime rice, sliced chicken, and avocado slices.
  10. Drizzle with remaining sauce, garnish with cilantro, lime wedges, and red pepper flakes.

Notes

To prevent browning, prepare avocado fresh or toss in extra lime juice. For meal prep, store chicken and rice separately and assemble when ready to serve. Chicken thighs can be substituted for extra juiciness.
