  • 1 tablespoon avocado oil
  • 1 1/4 cups basmati rice
  • 1 teaspoon minced garlic
  • 2 cups water (or broth)
  • 1 teaspoon lime zest
  • 1 teaspoon salt
  • 1/3 cup lime juice
  • 1 1/4 cups chopped cilantro leaves

Instructions

  1. Heat avocado oil in a Dutch oven or saucepan over medium heat.
  2. Add the basmati rice and toast until lightly golden and aromatic.
  3. Stir in garlic, then add water or broth, lime zest, and salt. Bring to a boil.
  4. Reduce heat, cover, and simmer for 7–8 minutes, stirring occasionally.
  5. Pour in lime juice, cover again, and cook for 2–3 more minutes.
  6. Remove from heat, fluff rice with a fork, and fold in chopped cilantro. Serve warm.

Notes

Use fresh lime juice for best flavor. Swap water for broth for richer taste. Add corn or black beans for extra variety.
