Instructions

  1. In a mixing bowl, combine instant coffee, sugar, and about ½ tablespoon of water. Mix until it forms a thick paste.
  2. Whisk the mixture vigorously by hand or with a hand blender. Whisk 10–12 minutes by hand or 5–6 minutes with a blender until light brown and fluffy with stiff peaks.
  3. Heat milk in a saucepan over medium heat until it starts to bubble around the edges. Do not boil over. Remove from heat.
  4. Divide the whipped coffee mixture into 4 cups, about 1–2 tablespoons each. Pour hot milk over the mixture in each cup, filling about ¾ full. Gently stir to combine without deflating the foam.
  5. Serve hot. Top with cocoa powder, cinnamon, or a pinch of sea salt if desired.
