Impossible Coconut Pie

A lighter, healthier twist on classic coconut pie that is easy to make and delicious.

Ingredients

  • 4 eggs
  • 1 1/4 cups sugar (or sugar substitute)
  • 1/2 cup flour (almond or coconut flour for gluten-free)
  • 1/4 cup butter (melted)
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups milk (almond or coconut milk for dairy-free)
  • 1 1/4 cups shredded sweetened coconut

Instructions

  1. Preheat your oven to 350℉ and grease a 9-inch pie plate.
  2. In a large bowl, beat the eggs until well combined.
  3. Add the sugar, flour, melted butter, vanilla extract, and salt. Whisk until mixed well.
  4. Pour in the milk and add the shredded coconut. Stir until combined.
  5. Pour the mixture into the prepared pie plate.
  6. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the pie to cool on a wire rack for at least an hour to set.
  8. Serve warm with whipped topping if desired.

Notes

For a healthier option, consider using a sugar substitute and almond flour. Can be served with fresh fruit or Greek yogurt.
