Irish-Style Corned Beef and Cabbage Stew

  • 1 small head of cabbage, chopped
  • 4 large carrots, chopped

  • 4 cups beef broth

  • 1 teaspoon black peppercorns
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Place the corned beef in a large pot and cover with beef broth.
  2. Add garlic, mustard seeds, and peppercorns into the pot.
  3. Bring to a boil, then reduce heat, cover, and simmer for about 150 to 180 minutes until tender.
  4. Remove the corned beef and let it rest before slicing.
  5. Add carrots, potatoes, and cabbage to the broth and cook until vegetables are tender, about 30 minutes.
  6. Slice the corned beef and serve with the vegetables and broth, garnished with fresh parsley.
