Easy Spumoni Bomba dessert

A fun and vibrant frozen Italian dessert with layers of pistachio, cherry, and chocolate gelato encased in a crunchy chocolate shell. Perfect for parties and celebrations!

  • 1 pint pistachio gelato
  • 1 pint cherry gelato
  • 1 pint chocolate gelato
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons coconut oil
  • Optional Decorations:
    • Crushed pistachios
    • Maraschino cherries
    • Sprinkles or edible glitter
  • Extra Toppings:
    • Whipped cream
    • Chocolate sauce
    • Caramel drizzle

Instructions

  1. Prepare your mold using a round silicone mold or a medium bowl lined with plastic wrap.
  2. Spread pistachio gelato along the bottom and sides of the mold. Freeze for 20 minutes.
  3. Add cherry gelato as the second layer. Freeze for another 20 minutes.
  4. Top with chocolate gelato and freeze for at least 4 hours or overnight.
  5. Melt chocolate chips with coconut oil until smooth and shiny.
  6. Remove frozen gelato layers from the mold. Place on a wire rack over a baking sheet and pour melted chocolate over the top to coat.
  7. Optional: Add decorations like crushed pistachios, cherries, or sprinkles while the chocolate is soft.
  8. Let sit at room temperature for 5–10 minutes before slicing with a warmed knife.
