Ground Chicken Stir-Fry

Lean ground chicken, crisp-tender veggies, and a glossy umami sauce come together in one skillet for a 30-minute weeknight hero.

Ingredients

  • 1 lb (450 g) lean ground chicken
  • 1 Tbsp avocado oil
  • 2 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 small zucchini, chopped
  • 3 Tbsp low-sodium soy sauce (or coconut aminos)
  • 1 Tbsp rice vinegar
  • 1 tsp sesame oil (optional)
  • 1 tsp cornstarch (optional, for thicker sauce)
  • Salt and pepper, to taste
  • Sesame seeds & chopped scallions, for garnish

Instructions

  1. Heat avocado oil in a large skillet over medium-high. Add garlic and ginger; sauté 30 seconds until fragrant.
  2. Add ground chicken; cook 5–7 minutes, breaking up meat, until browned and cooked through. Season lightly with salt and pepper.
  3. Stir in bell pepper, broccoli, and zucchini; cook 4–5 minutes until veggies are tender-crisp.
  4. Whisk soy sauce, rice vinegar, sesame oil, and cornstarch. Pour over stir-fry; toss to coat.
  5. Simmer 2–3 minutes until sauce thickens slightly. Sprinkle with sesame seeds and scallions. Serve hot.

Notes

Don’t overcrowd the pan—work in batches for even browning. Swap in any veggies you need to use up, and bump up the heat with red-pepper flakes or sriracha.
