Rice and Grilled Chicken

A satisfying and versatile meal combining grilled chicken and rice, perfect for meal prep or quick dinners.

  • 1 lb chicken breast or thighs
  • 2 cups rice (white or brown)
  • 2 tbsp olive oil
  • 1 lemon (juiced)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Grilled vegetables (bell peppers, zucchini, onions)

Instructions

  1. Marinate the chicken in olive oil, lemon juice, minced garlic, salt, and pepper for at least 1 hour.
  2. Preheat the grill to medium-high heat.
  3. Cook the rice according to package instructions.
  4. Grill the chicken for approximately 6-7 minutes on each side until the internal temperature reaches 165°F (75°C).
  5. Grill the vegetables alongside the chicken until tender.
  6. Serve the grilled chicken over rice and add grilled vegetables on the side.

Notes

Experiment with different marinades and sauces like tzatziki or teriyaki for added flavor. This dish is great for meal prepping!
