Jello Salad

Ingredients

  • 3 oz strawberry flavored gelatin (Jell-O)
  • 2 cups cottage cheese, small curd
  • 1 cup cold heavy whipping cream
  • 2 Tbsp granulated sugar
  • 1 tsp vanilla extract
  • 20 oz canned crushed pineapple, drained (reserve juice)
  • ½ lb fresh strawberries, quartered
  • 1 cup mini marshmallows (optional)
  • ½ cup chopped pecans or walnuts (optional)
  • ½ cup mandarin oranges (optional)
  • ¼ cup shredded coconut (optional)

Instructions

  1. Wash, remove the stems, and quarter the strawberries.
  2. Drain the crushed pineapple, reserving ⅓ cup of juice.
  3. In a blender, combine the strawberry gelatin, cottage cheese, and reserved pineapple juice. Blend until smooth.
  4. In a chilled bowl, whip the heavy cream, vanilla extract, and sugar until stiff peaks form.
  5. Gently fold the whipped cream into the gelatin mixture.
  6. Fold in the crushed pineapple, strawberries, and optional add-ins.
  7. Refrigerate for at least 2 hours to set.
  8. Serve chilled and enjoy!

Notes

Avoid using fresh pineapple, as it contains enzymes that prevent gelatin from setting. Customize flavors by swapping Jell-O flavors and fruit choices!
