Ingredients

Scale
  • 1 package (2 sheets) frozen puff pastry, thawed
  • 1 large egg
  • 2 tbsp milk
  • 16 oz ube jam
  • Cheddar cheese (optional)
  • Macapuno (optional)

Instructions

  1. Line a baking pan or cookie sheet with parchment paper and set aside.
  2. In a small bowl, prepare your egg wash by beating the egg with milk. Set this aside.
  3. Roll out the puff pastry sheets on a lightly floured surface. Cut them into 12 rectangles.
  4. Place 6 of the rectangles on the prepared pan. Brush the edges with the egg wash.
  5. Scoop 4-5 tablespoons of ube halaya into the center of each rectangle.
  6. Top with another rectangle of pastry. Crimp the edges with a fork to seal the filling inside.
  7. Optionally, place a slice of cheese or some macapuno on top of the ube filling.
  8. Make 2-3 cuts on top of each pie to allow air to escape while baking.
  9. Brush the pies with the remaining egg wash for a nice golden color.
  10. Freeze the pies while you preheat the oven to 375°F.
  11. Bake the pies for about 30 minutes or until they become golden brown, rotating the pan midway through baking. Serve warm.

Notes

Serve with powdered sugar, whipped cream, or ice cream. Pairs well with hot chocolate or coffee.
