Lavender Lemon Shortbread Cookies

  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 cups flour
  • 1 tbsp dried culinary lavender buds
  • 2 tsp lemon zest
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Additional sugar for dusting

Instructions

  1. Mix the softened butter and powdered sugar in a bowl until creamy.
  2. Gradually add flour and mix until smooth.
  3. Add lavender, lemon zest, vanilla, and salt; mix until evenly combined.
  4. Chill the dough in the refrigerator for at least 30 minutes.
  5. Preheat the oven to 350°F (175°C).
  6. Roll out the dough to 1/4 inch thick and cut into shapes.
  7. Place on a baking sheet lined with parchment paper and bake for 12-15 minutes.
  8. Cool on a wire rack and dust with sugar before serving.

Notes

Can serve with tea or coffee, and can be frozen for up to three months.
