Lavender Shortbread Cookies

Delightful lavender shortbread cookies that combine a unique floral flavor with a classic buttery taste, perfect for any occasion.

Ingredients

  • 2/3 cup sugar
  • 2 tablespoons fresh lavender flowers (or 2 to 3 teaspoons dried lavender, or 1 teaspoon lavender extract)
  • 1 tablespoon lemon zest
  • 2 cups all-purpose flour
  • 1 cup cold salted butter (cut into cubes)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Pulse together the sugar, lavender, and lemon zest in a food processor until well combined.
  3. Add the flour and pulse again to combine.
  4. Add the cold butter and pulse until the mixture resembles coarse crumbs.
  5. Press the mixture into an ungreased 8×8 pan and dock the surface with a fork.
  6. Bake for 45-50 minutes, rotating halfway through for even baking.
  7. Let the cookies cool for about 10 minutes in the pan, then remove from the pan and cut while warm.
  8. Allow the cookies to cool completely on a wire rack.

Store cookies in an airtight container for up to one week, or freeze for up to two months.
