Lavender and Vanilla Ice Cream Roll

A delightful dessert that combines floral lavender notes with rich vanilla ice cream, creating a light and elegant treat.

  • 4 large eggs, room temperature
  • ¾ cup granulated sugar
  • 2 tsp vanilla extract
  • ¾ cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp milk
  • 2 tbsp melted butter, cooled
  • Powdered sugar (for dusting towel and roll)
  • 1 ½ quarts vanilla ice cream
  • 12 tsp culinary dried lavender buds
  • ¼ cup heavy cream or milk
  • 1 tsp vanilla extract (optional)
  • Whipped cream (for garnish)
  • Extra dried lavender (for garnish)
  • Fresh berries (for garnish)
  • White chocolate shavings (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
  2. In a large bowl, beat the eggs and granulated sugar on high speed for 3–5 minutes until thick and pale. Stir in the vanilla extract.
  3. In another bowl, whisk the flour, baking powder, and salt. Sift the dry ingredients over the egg mixture and gently fold it in.
  4. Stir the milk and melted butter together, then fold a small amount of the batter into this mixture to lighten it before folding it back into the egg mixture.
  5. Spread the batter evenly in the prepared pan and bake for 10–12 minutes, or until the cake springs back when lightly touched.
  6. Dust a clean kitchen towel with powdered sugar. Invert the cake onto the towel, peel off parchment paper, and roll it up from the short end with the towel inside. Let it cool completely.
  7. In a small saucepan, warm the heavy cream or milk until steaming but not boiling. Stir in dried lavender, cover, and steep for 10–15 minutes. Strain and let cool.
  8. Soften the vanilla ice cream for 10–15 minutes. Stir the softened ice cream with the cooled lavender-infused cream and vanilla extract until smooth.
  9. Gently unroll the cooled cake and spread the lavender vanilla ice cream evenly, leaving a small border around the edges. Re-roll the cake without the towel and wrap it firmly in plastic wrap and foil.
  10. Freeze for at least 240 minutes, or until firm.
  11. Let the roll sit at room temperature for 5–10 minutes before slicing. Dust with powdered sugar and garnish as desired. Use a sharp, warm knife to slice and serve immediately.

Notes

This dessert can be stored tightly wrapped in the freezer for up to a month. Perfect for meal prep.
