Lemon Balm Simple Syrup

A refreshing homemade syrup infused with lemon balm, perfect for enhancing drinks and desserts.

Ingredients

  • 1 cup water
  • 1 cup organic cane sugar (or honey)
  • 1 packed cup fresh lemon balm leaves, gently bruised
  • Zest of 1/2 lemon (optional)

Instructions

  1. In a medium saucepan, pour in 1 cup of water and add 1 cup of organic cane sugar (or honey).
  2. Place the saucepan over medium heat and stir gently until the mixture simmers and the sugar is completely dissolved.
  3. Remove from heat and add the bruised lemon balm leaves and optional lemon zest.
  4. Cover the saucepan and let it steep for 20 minutes.
  5. Strain the mixture into a sterilized jar using a fine mesh strainer or cheesecloth.
  6. Let the syrup cool to room temperature, seal the jar, and refrigerate it for up to 2 weeks.
  7. To serve, mix 1 tablespoon of syrup with 8 ounces of sparkling water.

Notes

Store in a sterilized jar and keep refrigerated. You can freeze it in ice cube trays for longer storage.
