Lemon Chicken Orzo Soup with Spinach

A delightful soup combining tender chicken, fresh spinach, and orzo pasta in a zesty lemon-infused broth.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery; sauté until softened.
  3. Pour in chicken broth and bring to a boil.
  4. Stir in the orzo and cook according to package instructions.
  5. Add shredded chicken and spinach; simmer until spinach is wilted.
  6. Stir in lemon juice and season with salt and pepper.
  7. Serve hot, garnished with fresh parsley.

Notes

You can use rotisserie chicken for added flavor and convenience. For a vegetarian version, substitute vegetable broth and omit chicken.
