Lemon Chicken Skewers with Creamy Feta Sauce

A delightful dish combining marinated chicken, vibrant vegetables, and a rich creamy feta sauce. Perfect for barbecues or family dinners.

  • 3 tablespoons extra virgin olive oil
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/41/2 teaspoon cayenne pepper
  • 1/81/4 teaspoon ground cinnamon
  • 4 cloves garlic, finely chopped or grated
  • 1 inch fresh ginger, grated
  • 1/4 cup fresh cilantro and/or parsley, chopped
  • Crushed red pepper flakes
  • Kosher salt and black pepper
  • 2 pounds boneless skinless chicken breasts, cut into bite-size chunks
  • Juice of 1 lemon (about 2 tablespoons)
  • 2 tablespoons red wine vinegar
  • 2 tablespoons honey
  • 2 tablespoons chopped sun-dried tomatoes
  • 1 (12 ounce) jar marinated artichokes
  • 1 bunch asparagus, cut into thirds
  • 6 ounces feta cheese
  • 1/4 cup plain Greek yogurt
  • Juice from 1 lemon
  • 1/4 cup chopped fresh tender herbs (dill, basil, or parsley)
  • 1/4 teaspoon smoked paprika

Instructions

  1. In a bowl, combine 3 tablespoons olive oil with smoked paprika, ground cumin, cayenne pepper, ground cinnamon, 3 cloves garlic, ginger, cilantro, parsley, red pepper flakes, kosher salt, and black pepper. Add chicken, toss to coat, and marinate for 15 minutes or overnight.
  2. Prepare the vinaigrette by mixing 1/4 cup olive oil, lemon juice, red wine vinegar, honey, sun-dried tomatoes, minced garlic, red pepper flakes, salt, and black pepper until well combined.
  3. For the creamy feta sauce, blend feta cheese, Greek yogurt, and lemon juice until smooth. Stir in fresh herbs, smoked paprika, and red pepper flakes.
  4. Preheat the grill to medium-high. Thread marinated chicken, marinated artichokes, and asparagus onto skewers. Grill until charred and fully cooked, about 10-12 minutes.
  5. Serve skewers with vinaigrette and creamy feta sauce, garnished with fresh herbs, alongside warm naan or pita.

Notes

For enhanced flavor, marinate chicken overnight. Feel free to substitute vegetables or use shrimp instead of chicken for variation.
