This Lemon Posset is a creamy, dreamy dessert made with just three ingredients. It’s silky smooth, full of bright lemon flavor, and so simple to make – the perfect make-ahead dessert for any occasion.

Ingredients

  • 2 cups heavy cream
  • 3/4 cup granulated sugar
  • Zest of 2 lemons
  • 1/2 cup freshly squeezed lemon juice (approximately 34 lemons)
  • Fresh berries and mint leaves for garnish (optional)

Instructions

  1. In a medium saucepan over medium heat, combine heavy cream and sugar. Stir until sugar dissolves and the mixture begins to simmer (do not boil).
  2. Remove from heat and stir in lemon zest and juice. Mix well to incorporate the lemon flavor.
  3. Let the mixture cool for 10 minutes, then strain through a fine-mesh sieve for a smooth texture.
  4. Pour into serving glasses or ramekins. Cover and refrigerate for at least 4 hours, until set.
  5. Before serving, garnish with fresh berries and mint leaves if desired. Let stand at room temperature for 10 minutes to enhance flavor.

Notes

For best results, use heavy cream with at least 36% fat content. The possets can be made 1–2 days ahead and stored covered in the fridge. Straining the mixture before chilling ensures the silkiest result.
