The Lemon Thyme Mocktail is a crisp, herbaceous, and beautifully zesty drink that feels like a garden party in a glass. Tart lemon, mellow coconut water, a touch of maple, and plenty of bubbles make this mocktail perfect for brunches, baby showers, or any refreshing wind-down moment.

Ingredients

  • 1 oz fresh lemon juice (about 1/2 lemon)
  • 2 oz coconut water (unsweetened)
  • 0.5 oz maple syrup (or honey/agave; adjust to taste)
  • 34 oz soda water (plain or lemon-flavored)
  • Ice cubes
  • Lemon zest (for optional rim)
  • Garnish:
  • Fresh thyme sprig (lightly smacked)
  • Lemon wheel or twist

Instructions

  1. Rim the Glass (Optional): Rub a spent lemon half around the rim. Dip in finely grated lemon zest.
  2. Mix the Base: In a shaker, combine lemon juice, coconut water, and maple syrup. Shake briskly to blend.
  3. Build the Drink: Fill a chilled glass with ice. Strain the lemon-coconut mixture over the ice.
  4. Top with Bubbles: Add 3–4 oz soda water. Stir gently to retain fizz.
  5. Garnish & Serve: Smack the thyme sprig and lay it on top. Add a lemon wheel or twist. Sip fresh while sparkling!

Notes

Batch the lemon-coconut-maple base ahead and chill up to 24 hours. Add bubbles and garnish just before serving. Try muddling berries, skipping the sweetener, or swapping in tonic or flavored sparkling water. For a spa-like twist, add edible flowers or a cucumber ribbon.
