These Lime Popsicles are tart, sweet, and ultra-refreshing—made with just a few simple ingredients like lime juice, sugar, and water. The perfect cool-down treat for summer days.

Ingredients

  • 1 cup fresh lime juice
  • 1 cup sugar
  • 1 tablespoon unflavored gelatin powder (or ¼ teaspoon cellulose gum)

Instructions

  1. Warm 1 cup of water and stir in sugar and gelatin powder until fully dissolved.
  2. Add fresh lime juice and remaining 2 cups cold water. Stir to combine. Optional: add lime zest.
  3. Taste the mixture and adjust sweetness or tartness as desired.
  4. Pour into popsicle molds, leaving space at the top. Insert sticks.
  5. Freeze for 4–6 hours or overnight until solid.
  6. Run molds under warm water to loosen and enjoy!

Notes

Store popsicles in an airtight container with parchment between layers to prevent sticking. Best within 2 weeks. Add-ins like mint, coconut milk, or berries make fun variations.
