Lime Watermelon

This simple and refreshing Lime Watermelon is the perfect summer side dish. Quick to prepare, naturally gluten-free, and endlessly adaptable — ideal for cookouts, picnics, or everyday meals.

  • 1/2 large watermelon, peeled and cubed (about 1214 cups diced watermelon)
  • 1 teaspoon fresh lime zest (zest of 1 lime)
  • 2 tablespoons fresh lime juice (juice of 1 lime)
  • Optional Extras:
  • Fresh mint, basil, or cilantro
  • Crumbled feta or cotija cheese
  • Pinch of salt (1/8 teaspoon), Tajín seasoning, or chili powder

Instructions

  1. Cut Your Watermelon: Wash and dry the watermelon. Cut off both ends, stand upright, and remove the rind and pith. Slice into rounds and then into bite-sized cubes. Chill if desired.
  2. Combine with Lime: In a large bowl, add cubed watermelon, lime zest, and lime juice. Gently stir to combine.
  3. Taste & Adjust: Add more lime zest or juice to taste.
  4. Serve & Store: Serve immediately or store in an airtight container in the fridge for 2–3 days. Stir gently before serving.

Notes

Customize with fresh herbs, crumbled cheese, Tajín, or a pinch of salt. Add other fruits like mango, pineapple, or strawberries for variety. Perfect for meal prep — flavor improves as it chills.
