Lucky Charms Cookies

Fun and soft cookies loaded with Lucky Charms marshmallows and white chocolate for a delightful treat.

Ingredients

  • 1 cup salted butter (softened)
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 3/4 cups (388g) all-purpose flour
  • 1 teaspoon cornstarch
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups Lucky Charms cereal
  • 1 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  2. Beat the butter and sugar for 2-3 minutes until creamy and light.
  3. Add the eggs and vanilla, mixing until combined.
  4. Add the flour, cornstarch, baking soda, and salt. Stir until combined.
  5. Stir in the white chocolate chips and Lucky Charms until evenly dispersed.
  6. Use a medium cookie scoop to place balls of dough on the prepared sheets.
  7. Bake for 10-12 minutes until set around the edges.
  8. Press extra marshmallow pieces into each cookie right after removing from the oven.
  9. Let cool on the baking sheet for 5-10 minutes before transferring to a cooling rack.

Notes

For a healthier option, use whole wheat flour and light butter, and reduce sugar. These cookies store well in an airtight container for up to 4 days.
