Maple Dijon Chicken Breast with Sweet Potatoes and Brussels Sprouts

A delicious and healthy meal featuring tender chicken breasts, sweet potatoes, and Brussels sprouts, combined with a flavorful maple Dijon sauce.

  • 4 boneless skinless chicken breasts (thinly sliced)
  • Kosher salt (to taste)
  • Ground black pepper (to taste)
  • 1 medium sweet potato (peeled and chopped into cubes)
  • 1 pound Brussels sprouts (outer leaves removed, then halved)
  • 1/4 cup olive oil
  • 3 tablespoons Dijon mustard
  • 2 tablespoons pure maple syrup
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic (grated)
  • 2 teaspoons chopped fresh rosemary (or 1/2 teaspoon dried)

Instructions

  1. Preheat the oven to 425°F.
  2. Season the chicken breasts well with salt and pepper, coating them evenly.
  3. In a glass jar, add olive oil, Dijon mustard, maple syrup, balsamic vinegar, grated garlic, chopped rosemary, salt, and pepper. Shake to combine well.
  4. In a large bowl, combine sweet potatoes and chicken. Pour about one-third of the maple Dijon mixture over them and toss to coat. Spread mixture on a large baking sheet.
  5. Bake for 10 minutes.
  6. Add Brussels sprouts and the remaining maple Dijon mixture to the same bowl, toss to coat evenly, and set aside.
  7. After 10 minutes, add Brussels sprouts to the baking sheet with chicken and sweet potatoes. Bake for an additional 15-20 minutes until Brussels sprouts are browned and crispy.
  8. Drizzle the remaining maple Dijon mixture over the chicken, sweet potatoes, and Brussels sprouts before serving.

Notes

Garnish with extra rosemary or black pepper before serving. Pair with a side salad, lemon water, or iced tea.
