Marry Me Chicken

A delightful dish featuring juicy chicken breasts in a creamy sun-dried tomato sauce, perfect for special occasions.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (in oil, drained)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Fresh basil, for garnish (optional)
  • Freshly ground black pepper, for garnish (optional)

Instructions

  1. Season both sides of the chicken breasts with salt, pepper, garlic powder, and onion powder.
  2. Heat the olive oil in a skillet over medium-high heat and cook the chicken for 4-5 minutes on each side until golden brown and cooked through.
  3. Remove the chicken and set aside. In the same skillet, melt the butter and sauté minced garlic until fragrant.
  4. Add chopped sun-dried tomatoes and cook for 1-2 minutes.
  5. Pour in the chicken broth, simmer while scraping the pan, and then add heavy cream and Parmesan cheese.
  6. Return the chicken to the skillet, spoon sauce over it, and simmer for 2-3 minutes.
  7. Garnish with fresh basil and black pepper before serving.

Notes

Serve with pasta, rice, or steamed vegetables. Pairs wonderfully with a glass of Chardonnay.
