Matcha Mocktail

A fresh, light, and healthy mocktail made with matcha, pineapple, coconut water, and lemon.

Ingredients

  • 1 teaspoon matcha powder
  • 1 tablespoon boiling water
  • 0.5 teaspoon honey
  • 7 mint leaves
  • 3 oz pineapple juice
  • 1 oz coconut water
  • 1 oz lemon juice
  • 2 oz soda water (optional)

Instructions

  1. Whisk the matcha powder and boiling water together in a small bowl.
  2. Add the honey and stir until dissolved, then set aside to cool.
  3. Add the matcha mixture to your shaker.
  4. Clap the mint leaves together in your hands a few times and add to the mixture.
  5. Add the pineapple juice, coconut water, lemon juice, and a few ice cubes, then shake well.
  6. Strain over ice.
  7. Garnish and serve.

Notes

For a low-sugar version, skip the honey or use a low-calorie sweetener like erythritol or stevia.
