Matcha Sugar Cookies with Lavender Frosting

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 tablespoons matcha powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons lavender syrup or dried lavender (for frosting)
  • 1 tablespoon milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Whisk together the flour, matcha powder, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet mixture and mix until combined.
  5. Form the dough into balls and place them on the prepared baking sheet, flattening them slightly.
  6. Bake for about 10-12 minutes or until the edges are lightly golden. Allow to cool on a wire rack.
  7. Combine the powdered sugar, lavender syrup, and milk in a bowl for the lavender frosting. Adjust consistency as needed.
  8. Frost the cooled cookies with lavender frosting before serving.

Notes

Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. For longer storage, freeze unfrosted cookies for up to 3 months.
