Molasses Cookie & Maple-Coffee Ice Cream Sandwiches

  • 3 cups heavy cream
  • 2/3 cup maple syrup
  • 1/2 cup room temperature coffee
  • 2 tablespoons instant coffee granules
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • A pinch of salt

Instructions

  1. Prepare Ice Cream Base: Place all ice cream ingredients into the bowl of a standing mixer with the whisk attachment. Start whisking, slowly increasing speed to medium until soft peaks form.
  2. Freeze Ice Cream: Pour the whipped ice cream base into a large, shallow freezer-safe dish and freeze, stirring vigorously every 30-45 minutes for 2-3 hours.
  3. Make Cookies: While the ice cream is freezing, bake cookies, then transfer to the freezer to firm.
  4. Assemble Sandwiches: Scoop a generous amount of ice cream and sandwich it between two cookies. Store in an airtight container in the freezer.

Notes

Let sandwiches sit for a few minutes to soften before serving. They can be stored in the freezer for up to a month.
