Monster Bites (Pickled Mushrooms)

Savory, tangy pickled mushrooms, also known as ‘Monster Bites,’ are a delicious and healthy snack, perfect for any occasion.

  • 1 lb whole button mushrooms
  • 1 cup white vinegar
  • 1/2 cup water
  • 2 tbsp sugar
  • 1 tsp salt
  • 3 cloves garlic, smashed
  • 1 tsp mustard seeds
  • 1/2 tsp red pepper flakes
  • 1/2 tsp black peppercorns
  • 1 tsp dried oregano or thyme
  • 1 tbsp olive oil

Instructions

  1. Clean the Mushrooms: Clean the mushrooms with a damp cloth and lightly score the tops.
  2. Blanch the Mushrooms: Boil salted water and blanch the mushrooms for about 5 minutes.
  3. Drain and Cool: Drain the mushrooms in a colander and let them cool slightly.
  4. Pack the Jar: In a clean glass jar, pack the mushrooms tightly and add garlic, mustard seeds, red pepper flakes, peppercorns, and herbs.
  5. Make the Brine: Combine vinegar, water, sugar, and salt in a saucepot and heat until dissolved.
  6. Pickle the Mushrooms: Pour hot brine over the mushrooms until fully submerged.
  7. Finishing Touches: Drizzle olive oil on top and let the mixture cool completely before sealing.
  8. Refrigerate: Seal the jar and refrigerate for at least 24 hours before serving.

Notes

Store in the refrigerator for up to a month; keep mushrooms submerged in brine for best flavor.
