No-Bake Cheesecake Parfait

A delightful no-bake dessert featuring layers of creamy cheesecake, graham cracker crumbs, and cherry pie filling. Perfect for any occasion!

  • 1 1/2 cups finely crushed graham cracker crumbs
  • 3 tablespoons granulated sugar
  • 7 tablespoons butter (melted)
  • 1 8-ounce package cream cheese, softened
  • 1 14-ounce can sweetened condensed milk
  • 1/3 cup freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • 1 21-ounce can cherry pie filling

Instructions

  1. In a small mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until well mixed and set aside.
  2. In a medium mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth, about 1-2 minutes.
  3. Add the sweetened condensed milk and beat until well combined.
  4. Pour in the lemon juice and add the vanilla extract. Stir until everything is mixed together.
  5. Set 6 plastic, 9-ounce punch cups on the counter for assembly.
  6. Scoop 2 tablespoons of the graham cracker mixture into the bottom of each cup and press down lightly.
  7. Add 3 tablespoons of the cheesecake mixture into each cup on top of the crumbs and spread evenly.
  8. Distribute half of the cherry pie filling among the cups, reserving the other half for later.
  9. Sprinkle 2 tablespoons of the graham cracker mixture over the cherry layer.
  10. Divide the remaining cheesecake mixture among the cups, spreading it evenly on top.
  11. Top each cup with the reserved cherry pie filling.
  12. Sprinkle a little graham cracker mixture on top for decoration.
  13. Chill in the fridge for up to 24 hours before serving.

Notes

For an added touch, serve with whipped cream or a sprig of mint on top.
