No-Bake Lemon Blueberry Protein Bites

These protein bites are a delicious and healthy snack option, perfect for meal prep and energy boosts.

Ingredients

  • 1 cup rolled oats
  • 1/3 cup almond butter
  • 1/4 cup dried blueberries
  • 1/2 tsp cinnamon (optional)
  • 1 tbsp chia seeds
  • 1 tsp lemon zest
  • 1/2 cup vanilla protein powder
  • 1 tbsp shredded coconut
  • 2 tbsp honey (or maple syrup)

Instructions

  1. In a mixing bowl, toss together the rolled oats, protein powder, dried blueberries, lemon zest, cinnamon (if using), chia seeds, and shredded coconut.
  2. Next, add the almond butter and honey (or maple syrup) to the bowl.
  3. Mix all the ingredients together until the mixture becomes sticky and holds together.
  4. Once combined, use your hands to roll the mixture into bite-sized balls.
  5. Place the formed balls on a plate and chill in the fridge for about 10 minutes to firm up.
  6. After they have chilled, transfer the bites to a sealed container for storage.

Notes

These bites store well in the fridge for up to a week and can be frozen for up to three months.
