No-Peek Chicken and Rice Casserole

A simple and comforting one-dish meal that combines chicken, rice, and creamy soups, perfect for busy weeknights.

  • 2 cups cooked chicken, shredded
  • 1 cup long-grain rice
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 2 cups chicken broth
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, rice, cream of chicken soup, cream of mushroom soup, chicken broth, onion, garlic powder, salt, and pepper.
  3. Transfer the mixture to a greased 9×13-inch baking dish.
  4. Cover the dish tightly with aluminum foil.
  5. Bake in the preheated oven for 60 minutes without removing the foil.
  6. After an hour, check to see if the rice is tender and has absorbed the liquid.
  7. If desired, sprinkle shredded cheese on top and return to the oven uncovered for an additional 10-15 minutes until the cheese is melted.
  8. Garnish with chopped parsley before serving.

Notes

This casserole can be customized with additional vegetables or different soups based on your preference.
