One Pot Chicken Burrito Bowl

A flavorful and convenient one pot meal that combines all the delicious components of a burrito into a hearty bowl.

  • 1 pound chicken breast, cut into bite-sized pieces
  • 3 tablespoons olive oil
  • 1/4 cup yellow onion, diced
  • 1 cup extra-long grain rice, uncooked
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons chili powder
  • 2 cups water or broth

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until translucent for about 2-3 minutes.
  3. Add chicken pieces and cook until browned on all sides, about 5-7 minutes.
  4. Sprinkle in garlic powder, onion powder, and chili powder, stirring to coat the chicken and onions.
  5. Add uncooked rice, drained tomatoes, and rinsed black beans, mixing everything together.
  6. Pour in water or broth, stir, and bring to a boil.
  7. Reduce heat to low, cover, and simmer for about 20 minutes.
  8. Remove from heat, fluff with a fork, and serve warm with desired toppings.

Notes

Customize with additional toppings such as cheese, salsa, or avocado for extra flavor.
