One Pot Chicken Burrito Bowl

A filling and straightforward meal made in one pot, packed with protein and flavor.

Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 3 tablespoons olive oil
  • 1/4 cup yellow onion, diced
  • 1 cup extra-long grain rice, uncooked
  • 1 14.5 oz can diced tomatoes, drained
  • 1 15 oz can black beans, drained and rinsed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons chili powder

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Add the chicken pieces and cook until browned.
  4. Stir in the garlic powder, onion powder, and chili powder.
  5. Add the rice, diced tomatoes, and black beans; mix well.
  6. Pour in 2 cups of water and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked.
  8. Fluff the rice with a fork and serve warm.

Notes

Customize with toppings like cheese, avocado, or sour cream.
