One Pot Cowboy Spaghetti

A hearty dish combining savory meats, pasta, and tomatoes, perfect for busy weeknights or family gatherings.

  • 4 strips bacon, chopped
  • 1 ring (13 ounces) kielbasa sausage, sliced into ½-inch rounds
  • 1 yellow onion, finely diced
  • 1 teaspoon minced garlic
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 pound ground beef
  • 1 ½ cups (12 ounces) beef broth
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons hot sauce, or to taste
  • 8 ounces dry spaghetti, broken in half
  • 2 cans (14.5 ounces each) petite diced tomatoes, undrained
  • ½ cup tomato sauce
  • ½ cup sharp cheddar cheese, shredded
  • Chives, chopped, for garnish

Instructions

  1. In a large skillet over medium-high heat, cook the chopped bacon until browned and crispy, about 7–8 minutes. Transfer to a paper towel-lined plate, reserving 1 tablespoon of grease.
  2. Add the sliced kielbasa to the skillet and cook until browned on both sides, about 4–5 minutes. Transfer to the plate with bacon.
  3. Add the diced onion and cook until softened, about 3–5 minutes. Stir in minced garlic, kosher salt, and black pepper; cook for 1 more minute.
  4. Add ground beef, breaking it up until no longer pink, about 5–8 minutes. Drain excess grease.
  5. Reduce heat to medium-low and stir in beef broth, Worcestershire sauce, and hot sauce. Return bacon and kielbasa to the skillet.
  6. Place broken spaghetti in a criss-cross pattern over the meat mixture. Pour diced tomatoes and tomato sauce evenly over the top.
  7. Gently press down the pasta to submerge in liquid and cover with a lid; let simmer for 15–20 minutes, stirring every 5 minutes.
  8. Once pasta is al dente, remove lid, stir to combine, and smooth the surface.
  9. Sprinkle shredded cheddar cheese on top, cover, and let sit for 5 minutes until melted. Garnish with chopped chives before serving.

Notes

For best flavor, use fresh vegetables and quality meats. Adjust the spiciness by varying the hot sauce amount.
