Orange Creamsicle Smoothie

A refreshing smoothie that captures the essence of a classic orange popsicle, packed with nutrients and flavor.

Ingredients

  • 3 medjool dates (1/4 cup packed pitted Medjool dates)
  • 2/3 cup fresh squeezed orange juice
  • 1/3 cup plain or vanilla Greek yogurt (or dairy-free yogurt)
  • 1/3 cup light coconut milk
  • 1 cup frozen cauliflower
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon almond extract

Instructions

  1. Soak the dates in 1 cup of very warm water for at least 5 minutes.
  2. While the dates are soaking, prepare the remaining ingredients.
  3. Add soaked dates, orange juice, yogurt, coconut milk, frozen cauliflower, vanilla extract, and almond extract to a blender.
  4. Blend until smooth and creamy. Add more coconut milk if needed to reach desired consistency.
  5. Pour into a glass and enjoy immediately.

Notes

Garnish with a slice of orange or granola for added texture.
