  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 cups baby potatoes, halved
  • 2 cups green beans, trimmed
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together the Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  3. Rub the chicken breasts with olive oil and coat them with the Parmesan mixture.
  4. On a sheet pan, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out in a single layer.
  5. Place the coated chicken breasts on the sheet pan with the potatoes and roast in the oven for 20 minutes.
  6. Add the green beans to the sheet pan, drizzle with olive oil, and season with salt and pepper.
  7. Roast for an additional 10-15 minutes, until the chicken is cooked through and the vegetables are tender.
