Peach Cobbler Egg Rolls

A fun twist on traditional peach cobbler, these egg rolls feature a warm, sweet peach filling wrapped in crispy egg roll wrappers, perfect for any occasion.

Ingredients

  • 10 Egg roll wrappers
  • 1 Large can of sliced peaches, drained and rinsed
  • 1/4 C. Water
  • 1/4 C. Granulated sugar
  • 1 Tbsp. Cornstarch
  • 1 tsp. Vanilla extract
  • Squeeze of fresh lemon juice
  • 1 Large egg, beaten
  • 2 Tbsp. Butter, melted
  • 1/2 C. Brown sugar
  • 1 Tbsp + 1 tsp. Cinnamon, divided

Instructions

  1. Preheat the oven to 400°F.
  2. Dice the sliced peaches into smaller pieces.
  3. Place a skillet over medium high heat.
  4. Add the diced peaches into the hot skillet.
  5. In a small bowl, mix the cornstarch with water until smooth.
  6. Add the cornstarch mixture and granulated sugar to the skillet with peaches.
  7. Stir until the sugar melts and mixture thickens.
  8. Stir in vanilla extract, 1 tsp. cinnamon, and a squeeze of lemon juice. Remove from heat.
  9. Cool the peach mixture before filling the egg rolls.
  10. Place an egg roll wrapper on a flat surface; add a layer of cooled peach filling to one end.
  11. Fold the sides inward and roll tightly, sealing edges with beaten egg.
  12. Dip each egg roll in melted butter.
  13. Mix brown sugar with remaining 1 tbsp. cinnamon.
  14. Coat the butter-dipped egg rolls in the cinnamon sugar mixture.
  15. Place on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown and crispy.

Notes

Serve with vanilla ice cream, whipped cream, or caramel sauce for added sweetness.
