Peanut Butter S’mores Sandwich Cookies

Delightful sandwich cookies featuring creamy peanut butter, chocolate, and marshmallow fluff, perfect for any occasion.

  • 1 cup Creamy Peanut Butter
  • 1/2 cup Granulated Sugar
  • 1/2 cup Packed Light Brown Sugar
  • 1 large Egg
  • 1 tsp Pure Vanilla Extract
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 cup Semi-Sweet Chocolate Chips, melted
  • 1 cup Marshmallow Fluff

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the peanut butter, granulated sugar, brown sugar, egg, vanilla extract, baking soda, and salt until smooth.
  3. Scoop tablespoon-sized portions of the dough, roll into balls, and place on the prepared baking sheet, spacing them 2 inches apart.
  4. Flatten each ball with a fork in a crisscross pattern.
  5. Bake the cookies for 8 to 10 minutes until edges are golden and the centers remain soft.
  6. Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  7. Spread melted chocolate on the bottom of one cookie, top with marshmallow fluff, and sandwich with another cookie.
  8. Allow cookies to rest for 10 minutes for the chocolate to set.

Notes

These cookies store well for up to a week in an airtight container or can be frozen for up to three months.
